Okay, I figured I would post and tack a post for recipes....I know several of you wanted my Broccoli Rice recipe as well as Marks Taco Lasagna recipe--as more come upfrom our pot luck meetings at Chris's we will post them here.Broccoli Rice Casserole1 tbsp vegetable oil1/2 c chopped celery1/4 c chopped onion1 can Campbell's Cream of Broccoli soup1/4-1/2 c milk1 c diced pasturized proccess cheese spread (AKA Velveeta! LOL)1 pkg (10 oz) frozen chopped broccoli thawed and drained (or 10 oz fresh cooked)2 c rice (4 servings- cooked) instant rice prepared by package instructions.Optional: Paprika, and 1/2c shredded mild cheddar cheese.In a saucepan, heat oil. Cook Celery and onion in the oil until tender-crisp. Combine 1/4 c milk with soup, stir in celery-onion mixture, cheese(velveeta), broccoli and rice. Add more milk if mixture appears dry.Spread into a greased 10x6 baking dish. Optional: Sprinkle with Paprika.Bake at 30 minutes at 350 degrees.Optional: Sprinkle with Cheddar after 20 minutes of baking. Bake an additional 10 minutes.** Or ** Microwaive on high for 10 minutes, rotating dish halfway through cooking.Okay that's it! Easy right!?

Alriiiight! 

Glad to know it could be duplicated by someone else!  The original recipe itself was just a sort of throw together with what was available, so I'm really glad it turned out!

1- 12 count package of flour tortillas (8")
1- can Cambell's Select Mexican Chicken Tortilla Soup
1- Package of taco rice mix (we use Knorr or Lipton)
1- 6 ounce package of prepared southwest style chicken breast, pulled apart (we use butterball)
3/4 to 1 cup salsa or taco sauce (we used mild salsa)
16 ounces of shredded cheddar or colby jack cheese
 
Prepare taco rice mix according to microwave directions.  Mix the soup and the chicken together (I added about a 1/4 cup taco rice to thicken the soup some.) 
Spray the bottom of a 9" by 13" pan with cooking spray to prevent sticking.  Layer 4 tortillas in the bottom of the pan as such:  2 whole tortillas in the middle, 1 on each end.  Then cut 2 in half and place them on each side wide side against the long sides of the pan.  They will overlap. 
Pour the soup and chicken mix onto bottom layer of shells.  Sprinkle 1/3 of the cheese onto soup and chicken mixture. 
Layer 4 more shells in same fashion as for bottom layer. 
Cover with remaining rice mixture and sprinkle 1/3 of the cheese onto the rice.
Layer 4 more shells onto the rice. 
Top with salsa or taco sauce.  Sprinkle remaining cheese on top.
 
Bake at 375 degrees for 45 to 60 minutes, until cheese is melted and browned. 
Let sit 10 minutes before serving.  Serve with Sour Cream if desired.
